Our Story

The Bakery

The bakery project began with an ambitious goal: eventually bake Pho Lang Thang's bread in-house. We are still developing that part of the program and look forward to sharing it when it is ready.

Bao began practicing bread baking after a trip to Vietnam in 2014. That practice planted the seed for PLT Bakery. While bread remains a future chapter, Paige Trout is bringing the pastry program to life now through technique, tasting, and a willingness to try something unexpected.

Paige Trout

Paige leads the pastry side of PLT Bakery, bringing technique, curiosity, and a playful point of view to every bake. Before joining the PLT team, she served as both Sous Chef and Pastry Chef at Aperture, the acclaimed Cincinnati restaurant.

A team trip to Atlanta helped spark ideas for the program. Back in Cincinnati, Paige continues to shape the bakery through tasting, testing, and revisiting ideas. Her work moves between nostalgic Vietnamese and Southeast Asian flavors, contemporary bakery culture, and desserts that simply feel joyful to eat.

Same Same, But Different!

Through Paige's pastry work, PLT Bakery blends traditional influences with modern comfort food desserts and pastries. Some items feel deeply familiar; others are experimental. Every one should feel memorable, craveable, and distinctly Vietnamese American.

That is the Lang Thang philosophy: wandering, evolving, and creating your own path. The lineup can move from caramel flan and coffee panna cotta to chewy cookies, cream puffs, and desserts inspired by Vietnamese coffee and Southeast Asian ingredients.
